Now let's get this out of the way: This is not a glamorous dish. Like all our recipes it's easy, economical and very, very tasty, but no, it is not fancy, and that's intentional. I made tuna noodle casserole! I like tuna! I like cheese and noodles! Together they make a tasty meal any home cook can be proud of! If you think it's passe, that's fine. There are plenty of gourmands cooking complicated masterpieces all over the internet. I'm more interested in providing basic, accessible recipes for people cook to live even if they don't unecessarily live to cook. Plus - I'd defy any of you to taste my tuna noodle casserole and walk away unsatisfied. That's the straight truth.

-3 Tbsp butter
-3 Tbsp flour
-1 1/2 cups vegetable broth
-12 oz. whole wheat egg noodles
-1/2 cup milk
-2 cups cheddar cheese, shredded
-3 large cans tuna, drained & flaked with a fork
-1/2 cup Panko bread crumbs

I'm re-watching this episode, Episode 30, Chicken with Mushrooms, hoping it'll cheer me up. Hang on...it's working...working...OK, DONE! I'm happy now! Phew, that just saved my whole weekend.

-1 egg
-2 cups Italian breadcrumbs
-4 Tbsp butter
-2 Tbsp olive oil
-16 oz. sliced cremini mushrooms
-1 1/2 cup chicken broth
-1/2 cup cream
-juice of 1 lemon
-1 tsp capers
-1/2 cup parmesan cheese
-pinch of salt

Episodes » Episode 29: Macaroni & CheeseAnother episode guest staring our favorite intern, Emily. How long did she intern for us? You'll never know! Seems like forever though, doesn't it? Sigh, we miss her.
On to the episode! I've often said that were I to die tomorrow, I'd like macaroni and cheese to be my last meal. There's nothing more decadent, delicious and appealing then a big bowl of noodles and cheese. I would dare to say that no other American dish is so universally loved, and rightfully so.
There are a million variations on macaroni and cheese (I'll direct you here - a page I can't look at without salivating - as evidence) but because this is Economy Bites and because I believe in the power of the simple basic, that's what you'll get from this episode. A beautiful, delicious basic baked macaroni & cheese recipe that will not disappoint. Please watch with care...I hear drool ruins keyboards.

-1 pound macaroni
-2 pounds sharp cheddar cheese, shredded
-1/2 stick of butter
-1/2 cup of flour
-3 cups whole milk
-1 1/2 cup heavy cream
-2 bay leaves
-1 Tbsp mustard powder
-1 1/2 tsp paprika
-many pinches of salt
for breadcrumbs
-2 Tbsp butter
-2 Tbsp olive oil
-2 cups panko breadcrumbs
